We were born and bred in Umbria. Everyday, we select prime raw materials, and with humility, hard work and devotion, we've always worked hard to transform these materials into products of excellence. We began our farm in 1780, near Spoleto, with work driven by passion, creativity and devotion, and always following the natural path of tradition. For generations, the Farchioni family has been preserving the quality as well as the organoleptic and healthy characteristics of extra virgin olive oils. Trying not to take anything away from what nature provides us with. Therefore, we do not filter them. 



We have always taken the utmost care over every phase of production. As the olives move along the chain, they’re checked by people who work with inspired professionalism.

Blending

The art of blending is based on experience and inventiveness in the mixing of carefully selected genuine ingredients. Because flavor is the fruit of knowledge and skill.



The four basic tastes are bitterness, sweetness, saltiness and sourness; the combination of these basic tastes gives us the infinite flavours which enable to distinguish one oil from another one. 

Sensory analysis of oil is a more valuable guide to its quality than chemical or physical analysis. It may happen that oils with excellent chemical parameters have organoleptic defects (taste, aroma, fragrance) that can declass a product. Sensory analysis (tasting) of oil is still the best way to identify the organoleptic characteristics of virgin olive oils. 



Farchioni has been an Italian family business since 1780. In line with its ethical values and strategic aims, we have, for several years now, been engaged in a range of activities aimed at offering high quality products that respect both human health and the environment.

Today Farchioni has decided to formalize this commitment with the "Qualità – Ambiente - Sicurezza" ("Quality – Environment – Safety") project. We publicize this initiative by including the QAS® logo on all our product labels.

In order to be able to use the QAS® logo, Farchioni has implemented strict procedures, which are subject to regular audits by an independent certification body, to certify that requirements and standards are being met.
